Abstract (English):
Purpose: Activities in constrained postures, such as working in stooping or rotated postures as well as repetitive activities or working permanently in an upright standing posture can severely strain the musculoskeletal system. This field has hardly been analyzed with respect to the physical load; therefore, the following analysis focused on the physical load of hospital canteen kitchen workers based on an objective task analysis. Material and methods: The working days of 15 (9 female/6 male) employees of a hospital canteen kitchen (scullery: 2 f/4 m), conveyings: (5 f/2 m) and commissioning: 2 f) were analyzed on three different working days over a complete shift using objective task analysis. The objective task analysis was performed by an external observer, who records the particular postures to the spilt second by a specifically software. Results: In the hospital canteen kitchen >3.5 h of daily working time was conducted in a standing posture, followed by walking (>01.25 h) and sitting (>0.75 h). Bending down, carrying, bending forward, rotation, lifting and squatting lasted <0.5 h. The majority of tasks of conveying and scullery were carried out in a standing posture. Regarding the intersubject reliability the standing posture (p ≤ 0.03) as well as walking (p ≤ 0.01) and rotation (p ≤ 0.01) were significant in the scullery. In the conveying area bending down was significant (p ≤ 0.01). Conclusion: Employees of the hospital canteen kitchen mainly work in an upright standing posture. Continuous standing leads to increased pressure on the spinal structures, ligaments and joints of the hips, feet and knees and has further effects on the circulatory and venous systems of the legs; therefore, it is highly recommended to reduce prolonged standing in the hospital canteen kitchen.
