Abstract (English):: The organic food sold by agro ecological fairs promote the social transformations to generate sustainable changes in the production and consumption patterns, contributing to a new development paradigm. To this end, the study aims to reveal the production and commercialization strategies based on the perception of the producer / seller about the consumer at agro ecological fairs. This is a qualitative, descriptive research carried out based on a case study in 2019, with producers/sellers at an agro ecological fair. The research showed that, in the perception of producers, consumers look for quality, healthy food, with food diversity for weekly consumption, they also showed concern with the origin of the food and its environmental impact, the producers establish from their strategies of aimed at meeting these demands and contributing to an awareness of more sustainable consumption.
